Muesli Breakfast Cookies! [Recipe Inside]

The story behind these cookies is that I've recently discovered muesli as a breakfast option (a little late to the game, perhaps), and I wanted to try incorporating it into a portable breakfast cookie! For those of you who are unfamiliar with it's fancy name, muesli is a mixture of raw rolled oats and other ingredients like grains, fresh or dried fruits, seeds and nuts. It's essentially oats that have been dressed for you. I figured this would be perfect for baking with, since it's already got all of the goodies evenly distributed throughout. I've been buying Bob's Red Mill Old Country Muesli, but there are plenty of other brands out there. BRM Muesli has got: date crumbles, sunflower seeds, raisins, whole grain rye, whole grain barley, whole grain oats, flaxseed, almonds and walnuts.

If you're interested in trying these cookies, then go ahead and preheat that oven to 350:

250g (about 1 + 3/4 cups) Bob’s Red Mill Country Muesli
105g (3/4 cup) whole wheat flour
1/2 tsp ground cinnamon
1/2 tsp pumpkin pie spice
1 tsp baking soda, 1/2 tsp salt

50g (about 1/4 cup) coconut sugar*
50g (about 1/4) cup dark brown sugar, packed
4 TBS coconut oil, softened
4 TBS unsalted butter, softened
1 large egg, room temperature
2 tsp vanilla
120g (about 1/2 cup) pumpkin purée

Start by combining all the dry ingredients, and set that aside. In another bowl, combine softened (not melted) coconut oil and butter with coconut and brown sugar, and cream together with a hand mixer (or stand mixer.) Add in remaining wet ingredients and combine into a relatively smooth consistency. Add in the dry ingredients, and mix with a spatula until a chunky batter is formed.
Spoon onto a parchment-lined cookie sheet. I opted for 10 bigger cookies, but you could bake up smaller cookies.

Depending on how you like your cookies (crispy vs. soft) or how hot your oven runs, you'll be baking these from somewhere between 12 and 14 minutes. I suggest staying close by and making sure they're baking up how you like them!
