This week I am dedicating the blog to my FAVORITE Holiday…THANKSGIVING!
It's the Holidays, which means food loaded with carbs, sugar, and saturated fats. Am I going to sit here on my soap box and tell you to NOT indulge in some of the festive food? No. You and I both know that it would be an unrealistic request.
I AM, however, going to give you some healthier, yet SUPER tasty options!
Today I want to talk about mashed potatoes. There is NO substitute for these creamy, cheesy, dairy filled mashed tubers. That being said, there are other options that are NOT mashed potatoes, but that give you the same feel (notice I did not say taste…I'm no liar).
Option 1…mashed cauliflower. You can steam the cauliflower, throw it in the food processor, add some seasoning, and a little almond or coconut milk for liquid…get crazy and use Greek yogurt instead of sour cream.
Option 2….add ons….loaded potatoes? Sure…so why not load your mashed cauliflower with bacon, pancetta, garlic, scallions, etc.

Serves 8 people
1 head roasted garlic
4 tablespoons ghee, divided
½ onion, coarsely chopped
¾ pound parsnips (or about 5 medium parsnips), peeled and coarsely chopped
⅔ pound carrots (or about 2 large carrots), peeled and coarsely chopped slightly smaller than parsnips
1½ pounds cauliflower florets (or 1 small head of cauliflower), coarsely chopped
½ cup organic chicken broth
½ cup water
Freshly ground pepper
minced chives (optional)
