It's no secret that I love fall foods….especially with Thanksgiving right around the corner. This week I was in a pinch for a Tuesday night dinner and created a little something in my head.
I took a bag of Trader Joes pre cut butternut squash, container of cut onions, and fresh cranberries. Mixed all together with cinnamon, nutmeg, and a splash of apple cider. I placed a package of chicken thighs on top and seasoned with Italian spices….a generous amount to create a coat of flavor.
Put the lid on the crockpot and prayed it would come out tasty!
4-6 hours later…I had a tasty, fall inspired dinner waiting.
