Hey hey hey! You've made it over the half way hump!  

Congrats to all of our athletes that are competing in the Whole 30 (60-90!) Challenge! 

This week I've noticed a SERIOUS change in the weather...which obviously makes my eating desires change. I am one of those comfort food type of girls. The air gets cold and I want something warm and hearty....enter my finding of the WHOLE 30 approved CHILI recipe! 

This better taste good. I didn't know that all the teams HAD to make the meal I post for extra I was extra careful in what I posted this time! smile 


Sidenote: Make sure the tomato you pick does not have extra ingredients ie. sugar or you are screwed and not following Whole 30. Be smart. Read the label. I used to be a reading teacher - so I can help you read if it comes down to that. 

Easy Paleo Chili...

Serves: 6-8
2 Tablespoons bacon grease (or fat of choice)
1 lb ground beef
1 medium onion, diced
2 bell peppers, diced different colors (e.g. one red, one yellow)
2 Tablespoons chili powder
1 Tablespoon cumin
1 Tablespoon paprika
2 (14.5oz) cans stewed tomatoes (not flavored i.e. Italian or chili, just plain)
Salt and Pepper to taste
Add the bacon grease or fat of choice to the Dutch oven or large pot over medium heat.
Brown the ground beef. Add the onion and peppers and continue to cook until the meat is completely browned and the vegetables are tender.
Drain off any fat and discard.
Add the spices (chili powder, cumin, paprika).
Stir in the tomatoes, salt and pepper.
Bring the mixture to a boil, cover, and reduce the heat to low.
Simmer for 25 minutes, remove from heat and serve.
